Combined tabbouleh (without couscous) and garlicky baba ghanoush with halloumi. Used mint being peppermint added an interesting toothpastelike fragrance and taste to portion, still good. Parsley tasted good and fresh. NB the steam in pic, halloumi was piping hot. NB 2: really need to get better oil!
